OMAKASE 2018 brings a featured master chef to the Hiroshi kitchen from October 4-6 to create captivating culinary experiences for guests.

Diners can savor an exciting array of culinary delights from chef Carlos Leyva in collaboration with guest chef Hiroshi Shima, who made his name in some of the most prestigious Japanese restaurants in the United States.

      Hiroshi Shima

    Chef Shima was born in Hokkaido in northern Japan where he learned the art of traditional “Kaiseki” cuisine (traditional multi-course Japanese dinner), training under several of the most esteemed master chefs in Kyoto. After training for 15 years, Chef Shima moved to Los Angeles to explore western cooking styles. Fourteen years later, Chef Shima joined the Innovative Dining Group opening Sushi Roku Hollywood after two months. His talents did not go unnoticed, and Chef Shima was soon promoted to Executive Sushi Chef.

    Chef Shima’s signature style is to provide diners with a new experience of sushi and sashimi, using olive oil, chili peppers and caviar liked never paired before in Asian cooking. He is known for his “passion and curiosity for cuisine” which complements Sushi Roku’s concept for modern Asian cuisine” and the art of fusion. His strong work ethic is most evident as he oversees all six Sushi Roku restaurants in Hollywood, Santa Monica, Pasadena, Las Vegas, Scottsdale and Newport Beach as well as KATANA and ROKU Sunset restaurants in the heart of Hollywood.

      Carlos Leyva

    Born in La Paz, Mexico, chef Carlos Javier Leyva Sanchez heads the kitchen at Hotel Mousai’s exclusive Japanese fusion restaurant, Hiroshi, in Puerto Vallarta, Mexico. Bringing with him a wealth of experience from his time at Villa del Palmar Cancun Luxury Beach Resort & Spa as well as a long stint as chef at Nick San, Cabo San Lucas, his taste bud tingling creations are a testimony to his talents.

    Having prepared dishes for stars such as Jennifer Aniston, Michael Jordan and Bono among others during his time in Cabo San Lucas, the chef remains humble and dedicated to creating dishes that showcase his commitment to both flavor and presentation. Chef Leyva’s talent lies in his fine craftsmanship, applying cutting-edge culinary techniques to prepare locally grown ingredients while incorporating Japanese and East Asian traditions to delicious effect.
