The Perfect Wine Pairing by Chef Diego

In an interview with Chef Diego at Villa del Palmar Cancun’s Davino Restaurant, the young chef shared some great insight into pairing wines with your meal whether at home or while on vacation at the five star resort in Cancun.

Choosing the perfect wine for your meal depends on many factors: the occasion, the time of day, the weather and, of course, what you will be eating; oh and let’s not forget the price tag. The standard choice of white wine with fish or chicken dishes and red wine with darker meat and heavier meals is a good starting point, but there is more to choosing a wine to complement your meal than color and price. A good wine can be enjoyed with all kinds of dishes, but can equally be not such a great choice for some flavors.

Once a luxury reserved for ancient Roman emperors, today wine is an accessible treat that most people can afford to enjoy with their meals. More and more we look for a great wine to accompany our dining experiences, tailoring our choices to the occasion. At Villa del Palmar Cancun you will find a number of excellent wines from around $25-$30 dollars as well as some exceptional exclusive labels to try. Perhaps the best option while dining at the resort is to ask your waiter for a recommendation for you particular meal.

Whenever anyone asks me for advice on what type of wine to choose, I tend to recommend my personal favorite, which is 3V de Casa Madero. This is a Mexican wine from el Valle de Parras, near the city of Monterrey, which has a really complete full-bodied flavor with delicious aromas. It is well paired with a good quality steak like those you will find in La Casona, or in the case of Davino with the Short Rib.

Red Wine

If guests are looking for an intimate experience, perhaps opting for a romantic dinner on the seafront, enjoying a balmy breeze with the moon reflected in the Caribbean Sea, I recommend a combination of wines. For example, the first course may be paired with a chilled glass of wine wine, perhaps pinot grigio, while the main course complemented by a red wine, such as a French syrah.

Rosé wine is also a popular choice at Villa del Palmar Cancun as the warm sunny climate makes lighter wines all the more appealing. Just imagine a delicious salad at Zamá accompanied by a rosé cabernet sauviñon V!
