The purpose of the Perfect Plate program is to make sure that the restaurants within the Tafer Hotels & Resorts collection serve nothing but the very best dishes each and every time a guest order a meal. The hotel restaurants focus on cutting-edge techniques, eye-catching presentation and top quality fresh ingredients, aiming to please the most discerning palates.
Top quality products lay the foundation for outstanding dishes, and that is why the Chefs that work for Tafer’s hotels carefully choose suppliers who deliver amazingly clean, fresh and delicious ingredients. Building upon this quality, all dishes are prepared following particular methods to make a perfect dish every time, and every workstation contains a checklist so nothing is left to chance. The chef even cooks a dish each day to present to the staff to refresh their memory on exactly how a dish should look and taste, and briefly describes the meal to the cooks and waiters.

The Perfect Plate program includes an in-depth process to determine which dishes are featured on the menus that feature in the hotels, starting with several rounds of tests. Firstly, the chef will decide on which ingredients will star in each dish, choosing as many local ingredients as possible in addition to top-quality imported products where necessary. The chef will then start experimenting until he or she shapes the dish into an explosion of flavors, aromas, textures and visual impact. Once the dishes are ready for presentation, they are served to a certification committee including fellow chefs belonging to other restaurants at the resort, members of the management team, and the owner of Tafer Hotels & Resorts.
A certification process is used on each dish to rate the taste, visual presentation, quality, temperature and the overall experience a dish provides. If a dish is able to pass the meticulous certification process, it can then be placed into consideration as a menu item.
