Designed for sharing, the concept of tapas began in Spain, where small savory dishes and bites have long been served with the idea that diners can try a variety of things. Inspired by this fun and exciting dining style, Chef Mario Castro has given the tradition a new spin by creating a collection of scrumptious dishes that feature Mexican ingredients and flavors. Mestizo/a is a term that refers to individuals whose heritage includes both Spanish and Native American blood, which is also a terrific way to describe this unique marriage of culinary influences coming from both Spain and Mexico.
